One Pan Open-Face Breakfast Sandwich
- 1 Slice Honey Whole Wheat Bread
- 1 egg
- 2-4 slices Capocollo
- 1 slice Havarti or Muenster Cheese
- 4 cherry tomatoes
- 1/4 ripe avocado
- Arugula or....
- Micro Greens
- Sriracha
- Pepper
- Paprika
- Salt
- Dill
- Olive Oil Spread
Heat large skillet to a higher-medium heat. Place Capocollo slices on one side of the skillet; turning frequently and cooking until slightly crisp (3 minutes). While Capocollo is crisping crack egg into pan neatly creating an oval shape with the egg. Cook 2-3 minutes, then spiral Sriracha sauce over egg, season with pinches of salt, paprika, cracked black pepper, and dill. Flip egg and cook another 2-3 minutes. Take crisp Capocollo and place on bread slice. After you flip the egg, take a spoonful of olive oil spread and knock onto opposite side of skillet. Place slice of honey whole wheat bread over butter and gently press down. Place cheese slice over Capocollo and let rest. Slice cherry tomatoes into quarter pieces. Slice long pieces of 1/4 ripe avocado. Place egg onto bread, meat, and cheese and cover for 1 minute. Top with arugula or micro greens, avocado, and cherry tomato segments.
