1 Large Can Pumpkin Puree
4-6 Cups Low Sodium Chicken Broth
2 Stalks Celery, Chopped
2 Large Carrots, Chopped
1/2 Anise(fennel), diced
1 Can Great Northern Beans, rinsed and drained
1 Can Sweet Yellow corn and liquid
1 Cup baby kale, torn
½ Red Onion, Diced
1 garlic clove, minced
A few sprigs of Cilantro, stemmed and shredded
¼ tsp. coriander, crushed
¼ tsp. Rosemary, crushed
2 tbs. Salt
2 tsp. Coarse Black Pepper
¼ tsp. red pepper, crushed
2 Tbs. Brown Sugar
¼ Tsp. Cinnamon
¼ tsp ginger
½ tsp nutmeg
dash of cloves
Spoonful of Noosa Yoghurt, Plain
Sprig of cilantro or baby kale on top of yogurt
Recommend Side: Rosemary/olive oil toasted baguette slice
Add all ingredients in large pot and let simmer on low for 90-120 minutes. Top with spoonful plain Noosa Yoghurt.
